Sanjivani Warm Carrot Slaw is a rich source of Vitamins A, C, K, and fibers. This is quick to make recipe in which we sauté the carrots with minimal spices. When mildly cooked, the vegetable releases the Sulphur ions and does not lose the basic nutrients that benefit the body. Make this simple recipe and relish it with roti, paratha, or rice!  It is especially beneficial for those with high stomach acidity.

Ingredients:

  • Carrots, thick grated-1 cup
  • Cilantro, finely chopped1 tablespoon, more if desired

Spices:

  • Mustard seeds-½ teaspoon
  • Green chilies, ground-1/2 for mild to medium and-1 teaspoon for hot taste
  • Salt to taste

Liquids:

  • Canola oil/Cooking oil-1 tablespoon
  • Water-1 tablespoon

Cooking Instructions:

  • Heat the oil in a pan.
  • Add mustard seeds and let them crackle.
  • Add green chilies first, followed by grated carrots, and salt. Also add water to ensure the carrot gets slightly soft. Sauté for a minute on a high flame.

Garnish with cilantro and serve it and serve it with tortilla or paratha or Rice and dal.
