 Sanjivani Warm Cabbage Slaw is a rich source of fiber, Vitamin C and low in sodium. Cabbage when cooked slowly, releases the enzyme called sulforaphane which has anti-inflammatory properties. Sulforaphane is known to neutralize the toxins and to protect DNA from the process of mutation that leads to cancer. Sulforaphanes are released when minimally cooked and is an anti- aging enzyme. This easy and quick to make recipe is a must try for all who prefer to eat vegetables with less oil and mild spices.

Ingredients:

  • Cabbage, chopped-1 cup
  • Cilantro, finely chopped-1 tablespoon, more if desired.

Spices:

  • Mustard seeds-½ teaspoon
  • Green chilies, ground-1/2 for mild to medium and-1 teaspoon for hot taste
  • Salt to taste

Liquids:

  • Canola oil/Cooking oil-1 tablespoon
  • Water-1 tablespoon

Cooking Instructions:

  • Heat the oil in a pan.
  • Add mustard seeds and let them crackle.
  • Add green chilies first, followed by cabbage, and salt. Also add water to ensure the cabbage gets slightly soft. Sauté for a minute on a high flame.
  • Garnish with cilantro and serve it with tortilla or paratha or Rice and dal.

Those on weight loss diet may prefer to consume them by itself.
