Sanjivani Tomato soup stimulates the taste buds with the nutrition-packed combination of tomato and carrots. The easy-to-make recipe is especially designed to ensure the nutrients of the vegetables are not lost due to overcooking. Sanjivani recipe does not include the milk or crème because of the Ayurveda principle that tomato and milk is a pair of opposite food, one that imbalances the Tridosha . Also, tomatoes are acidic in nature and with milk it forms amalgam in the body which interferes in the absorption of nutrients.

Ingredients:

  • Tomato, big pieces-2 cups
  • Carrot, big pieces-½ cup
  • Onion, big pieces-¼ cup
  • Garlic, chopped-1 clove (Optional)

Spices:

  • Cumin seeds-½ teaspoon
  • Black pepper powder-½ teaspoon
  • Salt to taste

Liquids:

  • Avocado oil/Ghee(liquified)-1 tablespoon

Cooking Instructions:

  • Heat 1 tablespoon of ghee in a pan and add cumin seeds.
  • Sauté tomatoes, carrots and onions for 1 minute. Garlic is optional and can be added now.
  • Add black pepper powder and salt. Mix well.
  • Add 3 cups of water and boil it for 3-5 minutes.
  • Blend the mixture to the homogeneous consistency.
  • Serve hot in the serving cups!
