 Sanjivani Sweet Corn with Mung Sprouts is rich in protein, fiber and Vitamin B. Keep the mung beans sprout  ready and make healthy breakfast in minutes!

Ingredients:

  • Mung beans, sprout-1½ cups
  • Corn-½ cup
  • Cilantro, finely chopped-1 teaspoon
  • Thin Sev/fried besan noodles-2 teaspoons

Spices:

  • Cumin seeds-1 teaspoon
  • Turmeric powder-½ teaspoon
  • Black pepper– 1-2 pinches based on how spicy hot is desired
  • Salt to taste

Liquids:

  • Avocado oil/Cooking oil-2 teaspoons
  • Water-¼ cup

Cooking Instructions:

  • Heat the oil in a pan and add cumin seeds. Let them crackle.
  • Add sprouted mung beans, corn, turmeric powder, black pepper, water, and salt. Mix well.
  • Let it cook for 4-5 minutes to achieve a palatable level of softness of the sprouts and corn. We do not recommend overcooking.

Garnish with cilantro and thin Sev (optional) as you serve it hot.
