Ingredients:

  • Mung beans sprouts-½ cup
  • Math beans sprouts-½ cup
  • Lentilsprouts- ½ cup
  • Rajma/kidney beans, boiled-½ cup
  • Garbanzo beans, boiled-1/2 cup
  • Cabbage-green and purple (if possible), finely chopped-1/2 cup each
  • Lettuce, finely chopped-1 cup
  • Bell peppers-red-green-yellow, finely chopped-1 cup
  • Onion, finely chopped-1 cup
  • Tomatoes, finely chopped-1 cup
  • Cucumber, finely chopped-1 cup
  • Thin Sev/fried besan noodles-1 cup
  • Cilantro, finely chopped-1/3 cup or more if desired

Spices:

  • Chaat masala-1 teaspoon
  • Black pepper powder-1 teaspoon (optional)
  • Cumin powder-1 teaspoon
  • Salt to taste

Liquids:

  • Avocado oil/Cooking oil-1 tablespoon
  • Lemon juice-1 teaspoon
  • Sweet and Sour Chutney-1 cup
  • Spicy Green Chutney (optional)-1/2 cup or Garlic Cilantro Chutney-1/2 cup

Cooking Instructions:

  • Heat the oil in a pan and add all sprouted beans and sauté them for about 3-4 minutes. Keep them aside in a big bowl.
  • Add the cooked rajma/kidney beans and garbanzo beans to the above mixture. Mix them well.
  • Add lemon juice, Chat masala, Cumin powder, black pepper powder and salt. Mix well to ensure the spices are equally distributed in the mixture.
  • When ready to eat, add all the chopped vegetables-green and purple cabbage, bell peppers, onions, tomato, cucumber, lettuce to the bowl.
  • After serving the above Bhel mixture in the individual bowls, add Sweet and Sour Chutney, Spicy Green Chutney (optional)and Garlic cilantro chutney. The proportion of chutneys can be altered to suit the preferred flavor and spiciness. Mix well.
  • Garnish the Bhel with cilantro and Sev(optional).

Note: please do not add tomatoes, cucumber, lettuce, and salt until ready to eat otherwise the salad will not stay crispy
