Sanjivani Tortilla soup is completely gluten-free with all the nourishment of plant based protein. It is spicy, flavorful and filling. Try this Mexican soup at home once and we are sure you would want to make it again and again because of our easy-to-make, delicious and healthy recipe. Sanjivani Tortilla soup is mainly made up of tomatoes, onion, garlic, black beans and corn.

Ingredients:

  • Black beans, boiled-2 cups
  • Onion, diced-2 cups
  • Carrot, diced-1 cup
  • Corn, boiled-1 cup
  • Red bell peppers, diced-½ cup
  • Capsicum, diced-½ cup
  • Tomato, diced-2 cups (or tamato paste-2 tablespoons)
  • Garlic, finely chopped-6 cloves
  • Cilantro, finely chopped-½ cup
  • Vinegar-2 teaspoons
  • Salsa-1 cup (optional)
  • Cheese, grated-2 tablespoons (optional)

Spices:

  • Cumin powder-1 tablespoon
  • Taco seasoning-2 tablespoons (depending upon the spiciness desired)
  • Salt-2 teaspoons

Liquids:

  • Avocado oil/Coconut oil-2 tablespoons
  • Water-6 cups

Cooking Instructions:

  • Heat 2 tablespoons of oil in a pan. Add onion, carrots and capsicum. Sauté them over medium flame until they start to become soft.
  • Add salt, cumin powder and chopped garlic. Mix well and cook it for 1 minute until it gets aromatic.
  • Add tomatoes/tomato paste and 6 cups of water and mix well. Let it cook over high flame until one boil. It may take 5 to 7 minutes.
  • Add boiled corn, cilantro, vinegar and taco seasoning . Finally add boiled black beans and stir well. Let it simmer on medium flame for 5 minutes.
  • You may add salsa for additional flavor.
  • The soup is cooked. Now remove one serving in the soup bowl. Gently crumple tortilla chips with hands and garnish them on the top of the soup just before the serving.
  • Also grate some cheese for additional flavor. (optional)
