Health Benefits:
Uttapam is a very delicious South Indian dish which is low in fat and high in nutrition. It is a healthy weight loss recipe.
Ingredients:
- Rice /brown rice-2 cups-rinsed and soaked for 2 hours
- Urad dal -1 cup-rinsed and soaked for 2 hours
- Mung dal-1 cup-rinsed and soaked for 2 hours
- Onion -finely chopped-¼ cup
- Tomato -finely chopped-¼ cup
- Capsicum -finely chopped-¼ cup
- Carrot -grated-¼ cup
- Spinach -finely chopped-¼ cup
- Peas -¼ cup
- Coriander -finely chopped-3 tablespoons
Spices:
- Salt to taste
- Green chili -finely chopped-1 tablespoon
Liquids:
- Avocado Oil /Canola oil/other cooking oils

Cooking Instructions for Uttapam :
- Stir the fermented batter which already has salt and oil mixed in it
- Now heat the nonstick skillet/tava and pour 2 ladlesful of batter. Spread out in a circular motion to make a thick pancake.
- Top the Uttapam with the vegetable mixture of finely chopped onions, tomato, capsicum, spinach, cilantro, and grated carrots, and peas over it evenly.
- Pour ½ teaspoon of oil around the edges.
- Cover it with a lid and let it cook for 2-3 minutes on a low flame initially until the batter has dried up and then again on medium flame for a few more minutes until the edges turn golden brown
- Flip the Uttapam and roast the other side for a couple of minutes.
- Once cooked, remove it from the pan.
- Serve it hot with Tomato chutney or Coconut chutney and Sambhar.
Note :
To make Instant Uttapam when the fermented batter is not available, use Urad dal to Cream of wheat in the proportion of 1:3.
For 1 cup of Urad Dal, take 3 cups of Cream of Wheat.
Soak Urad dal in water at least for 1-2 hours and grind it in a smooth paste. Now divide Dal batter in equal portions and make same number of portions of 3 cups of Cream of wheat. Then each batch of dal and cream of wheat can be used as 1 serving of Uttapam. Do not mix and leave the batter ready but make it ready 5-10 minutes before or else the batter will be mushy and Uttapam will not come out right.
Add 1 tablespoon fruit salt (ENO) or 1/4 teaspoonful of baking soda to each batch just before making and mix it well so that the batter rises instantaneously.
You may add different vegetables of your choice on the Uttapam after spreading it on the skillet before it gets cooked e.g.-grated cabbage or broccoli.
