Sanjivani Sweet Fruit & Nut Fada Lapsi is an excellent option for a healthy breakfast or dessert. Besides giving a quick boost of energy, it also provides fibers, vitamins, and minerals in an early morning dessert form with uncompromising taste.
Ingredients:
- Cracked wheat /Fada-1 cup
- Jaggery -¼ cup (optional for non-diabetic patients)
- Fruits (Banana+Apple+Grape+Strawberry), diced-½ cup per serving
- Almonds slivered-1/3 cup
- Cashew nut pieces-1/3 cup
- Raisins -1/3 cup – Golden raisins are preferred.
- Other dry fruits as desired
Spices:
- Cardamom powder -2 teaspoons or 3/4 teaspoonful of seeds
- Cinnamon powder – teaspoon
- Saffron -15 strands
- Honey -1 tablespoon per serving (as required)
Liquids:
- Coconut oil -2 tablespoon or equivalent amount of Ghee as desired or as suggested for your health.
- Water-3 to 4 cups (depending on the size of cracked wheat)
Instructions:
- To the pressure cooker pot, add cracked wheat, coconut oil, almonds, cashews, raisins, jaggery, cardamom seeds, cinnamon powder, saffron, and water. If using cardamom powder, add it after it is cooked to save the aroma.
- Steam cook for 8-10 minutes.
- For one serving, take ½ cup of cooked cracked wheat and mix with ½ cup of diced fruits, and honey. Add Cardamom powder as mentioned earlier if using the powder.
- Serve the fada lapsi hot with room temperature fruits and honey.
- Alternately the nuts can be added afterwards too to get some more nutrition. Children prefer them in the powder form.
