Sanjivani Palak Patra is a healthy item that is rich in protein, minerals, fibers, and iron. Have it with delicious Sanjivani Chutneys-sweet and sour date chutney or cilantro chutney to enhance the taste even more.
Ingredients:
- Spinach leaves-2 ½ cups
- Besan flour-1 cup
- Dry mango powder -½ teaspoon or sour yogurt-3 tablespoons
- Cilantro , chopped-2 tablespoons
- Curry leaves -5 to 6
Spices:
- Ginger , ground or grated-½ inch
- Mustard seeds -1 teaspoon
- Sesame seeds -1 teaspoon
- Garam Masala (mace, cinnamon, clove)-¼ teaspoon
- Green chilies , ground-½ teaspoon or add red chili powder ½ teaspoon
- Asafetida -¼ teaspoon-less if too strong
- Turmeric powder-½ teaspoon
- Black pepper , ground-¼ teaspoon
- Agave syrup-1 teaspoon, more if desired for additional sweetness
- Baking soda -1 pinch
- Salt to taste
Liquids:
- Avocado oil -3 tablespoons
- Water-About a ½ cup
Cooking Instructions:
- In a bowl, take Besan flour, asafetida, turmeric powder, black pepper powder, agave syrup, baking soda, garam masala, green chilies (or red chili powder), ginger, and dry mango powder/sour yogurt, 2 tablespoons of oil, and add water to mix into a thick batter.
- Add salt to taste.
- Now add spinach to the batter.
- Grease a stainless-steel plate with oil and pour the mixture in it, spread it evenly to get about 1 inch of thickness
- Now put the plate in a steamer to steam for 7 to 8 minutes.
- In a small pan, heat the remaining oil for tempering. Add mustard seeds, sesame seeds, and curry leaves. Let them crackle.
- Immediately pour the tempering on the steamed spinach plate.
- Cut the steamed spinach into square pieces of the desired size. Remove the pieces from the plate with the help of a spatula.
- Serve the hot patra/bars with your favorite chutney. For example, if you like the sweet taste then have it with sweet chutney and if you prefer spicy or garlic taste then have it with spicy cilantro chutney or cilantro garlic chutney.
