Sanjivani Soupy Cauliflower Sabji is a very easy recipe to cook a tasty vegetable of cauliflower, green peas with dry fruits. It is rich in fibers, free from cholesterol, low in calories, and low on fat.

Ingredients:

  • Cauliflower , florets-2 cups
  • Green peas-1 cup
  • Cashew pieces-2 tablespoons
  • Green or Golden Raisins -2 tablespoons
  • Lemon juice/Lime -1 teaspoon
  • Cilantro , chopped-1 tablespoon

Spices:

  • Green Chilies , ground-½ teaspoon
  • Ginger , ground-½ teaspoon (optional)
  • Mustard seeds -½ teaspoon
  • Salt to taste

Liquids:

  • Canola oil/Cooking oil-1 teaspoon
  • Water-6 cups

Instructions:

  1. In a cooking pot, heat the oil and add mustard seeds. As they crackle, add 6 cups of water and cauliflower florets, and cook on a high flame.
  2. Add green peas now or after 5 minutes based on the variety of the peas (based on their cooking time) to the pot.
  3. Also add cashew pieces, raisin, chilies, ginger, and salt to taste
  4. When the cauliflower and peas are soft and tender, turn the flame off.
  5. Add lime/lemon juice before serving.
  6. Garnish the sabji with cilantro.
  7. Serve it hot with roti or rice.
