Sanjivani Soupy Cauliflower Sabji is a very easy recipe to cook a tasty vegetable of cauliflower, green peas with dry fruits. It is rich in fibers, free from cholesterol, low in calories, and low on fat.
Ingredients:
- Cauliflower , florets-2 cups
- Green peas-1 cup
- Cashew pieces-2 tablespoons
- Green or Golden Raisins -2 tablespoons
- Lemon juice/Lime -1 teaspoon
- Cilantro , chopped-1 tablespoon
Spices:
- Green Chilies , ground-½ teaspoon
- Ginger , ground-½ teaspoon (optional)
- Mustard seeds -½ teaspoon
- Salt to taste
Liquids:
- Canola oil/Cooking oil-1 teaspoon
- Water-6 cups
Instructions:
- In a cooking pot, heat the oil and add mustard seeds. As they crackle, add 6 cups of water and cauliflower florets, and cook on a high flame.
- Add green peas now or after 5 minutes based on the variety of the peas (based on their cooking time) to the pot.
- Also add cashew pieces, raisin, chilies, ginger, and salt to taste
- When the cauliflower and peas are soft and tender, turn the flame off.
- Add lime/lemon juice before serving.
- Garnish the sabji with cilantro.
- Serve it hot with roti or rice.
