A delectable dish made mainly with Cream of wheat and dry fruits that is easy to make and loved by all age groups.

Sanjivani Sooji Halwa is a good source of energy, vitamins, iron, and protein. It is the perfect dish to satisfy the sweet tooth while maintaining the health benefits intact.
Ingredients:
- Coarse Cream of wheat /Rava/Sooji-1 cup dry roasted*
- Ghee / cold pressed coconut oil -3 Tablespoons when liquified
- Jaggery /palm sugar/coconut sugar/blue agave syrup-¼ cup or sweetener of your choice
Spices:
- Cashew nuts -split,1 tablespoon
- Almonds -Slivered or sliced 1 tablespoon
- Pistachios -Slivered or sliced 1 teaspoon
- Golden Raisins -1-2 tablespoons
- Cardamom -½ teaspoon ground or crushed
- Saffron strands-5 to 10
Liquids:
- Water-2 ½ cups (Milk is frequently used when offered for Puja instead of water)
Cooking Instructions :
*Dry roast the Rava/Cream of wheat in a cooking pot on a medium flame for about 4-5 minutes and set aside. (Dry roasting will allow you to use less ghee or oil)
- In a cooking pot, add ghee or coconut oil on medium flame
- Add dry roasted cream of wheat and raisins. Roast it again on a medium flame until the raisins get big and rounded. Cream of wheat also will get lighter in weight once well roasted.
- Boil 2 ½ cups of water, add jaggery to let it dissolve in the hot water
- Now slowly add boiling water to the roasted Cream of wheat while stirring constantly to not allow clumps to form
- If you are using any other sweetener, then add to the recipe now
- Add cashew nuts, saffron and cardamom and mix them well.
- Cover the cooking pot with the lid and let it cook in its own heat as you turn the stove off.
- Top it with grated almonds and pistachios.
- Serve it warm.
