Sanjivani Soft Taco is a healthy recipe packed with the protein rich black beans, Vitamin C rich bell peppers & tomatoes and mouthwatering taste of Salsa and Taco seasoning. Soft taco is a very flexible recipe and can be made with whatever vegetables available at the moment because there is no hard and fast rule about its ingredients. This is a great food option for kids’ tiffin and quick snack with leftover Roti.

Ingredients:

  • Roti-4
  • Bell peppers(all 3 colors), diced-1 cup
  • Onion, diced-1 cup
  • Tomato, diced-1 cup
  • Lettuce, roughly chopped-1 cup
  • Black beans, boiled-1 cup -½ cup
  • Cheese, grated-4 tablespoons (optional)

Spices:

  • Taco seasoning-2 tablespoons
  • Salt to taste

Liquids:

  • Canola Oil/Cooking oil-1 tablespoon

Cooking Instructions:

  1. Heat the oil in a pan.
  2. Add the onions once the oil gets hot and sauté them until they turn golden.
  3. Add bell peppers and mix well. Cook it for 1-2 minutes. We will not overcook it to ensure the crunchiness of the bell peppers is intact.
  4. Add black beans, salt and taco seasoning in the pan and allow them to mix and cook for 2-3 minutes. Put off the flame.
  5. Add lettuce, tomatoes and cheese in the mixture.
  6. Now take one Roti and spread the black beans mixture on one side of the roti. Fold it and repeat the procedure for another 3 rotis. Keep them aside.
  7. Heat the skillet and put the folded roti on top of it. Keep the flame medium.
  8. Apply Canola oil around the roti on the skillet. Let it cook for 2 minutes. Then carefully flip it using a spatula. Again apply the oil and allow it to cook for 2 minutes.
  9. Remove it carefully from the skillet and repeat the process with another 3 rotis.

The soft tacos are ready to eat with Salsa!
