Sev Khamani is a spicy and soft Gujarati snack with goodness of Protein. It has a low glycemic index so very good for weight loss and patients with the diabetic condition.
Ingredients:
- Chana Dal, rinsed and soaked-½ cup
- Garlic, grated-1 tablespoon
- Buttermilk-1 cup
- Sev-1 cup
- Pomegranateseeds-½ cup
Spices:
- Mustard seeds-1 teaspoon
- Asafoetida-¼ teaspoon
- Turmeric-1 teaspoon
- Cilantro, finely chopped-1 tablespoon
- Ginger, ground-1 teaspoon
- Curry leaves-7-8
- Green Chili, ground-1 teaspoon
- Salt to taste or 2 teaspoons or based on health conditions
Liquids:
- Water-4 cups
- Avocado Oil-2 Tablespoons
Cooking Instructions:
- Rinse ½ cup of chana dal and soak for 2-3 hours. Rinse again and grind it coarsely without water. Steam the ground chana dal in a steamer for 8-10 minutes. Keep it aside.
- Heat the oil in a pan. Add Mustard seeds and let them crackle. Then add sesame seeds, asafetida, curry leaves, turmeric. Mix well.
- Add 1 cup of buttermilk, ginger paste, chili paste, grated garlic and salt. Mix well. Let it boil for 2-3 minutes. Add ½ cup of water and let it boil for 5 minutes.
- Add ground chana dal and mix well. It will soak the water content of the pan. Let it cook for 5 minutes.
- Finally garnish it with 1 tablespoon of cilantro, pomegranate seeds and sev.
- Serve it with Sweet or Green Chutney.
Note:
Instead of 1 cup of Buttermilk, you may also add 1 tablespoon of Lemon juice with 1 cup of water.
