Sanjivani Pulao is a perfect dish to cook on a busy day as our recipe is quick and easy to make yet very nutritious because of added vegetables and spices. Pulao is easy to digest and rich in antioxidants. Sanjivani pulao is a wholesome light meal for children’s school tiffin.

Ingredients:

  • Rice /Brown Rice-1 cup, rinsed and soaked for 10 minutes
  • French beans, diced-¼ cup
  • Green peas-¼ cup
  • Carrot, diced-¼ cup
  • Onion, diced-¼ cup
  • Cashew Nuts, splits-3 tablespoons
  • Almonds, sliced-3 tablespoons

Spices:

  • Cardamom powder-½ teaspoon
  • Cumin seeds-1 teaspoon
  • Saffron-5 to 7 strands
  • Turmeric powder-1 teaspoon
  • Black pepper powder-1 teaspoon
  • Garam Masala-1 teaspoon
  • Pav bhaji masala-1 tablespoon
  • Ginger, grated-½ teaspoon
  • Green chilies, crushed-½ teaspoon
  • Cilantro, finely chopped-10 to 12 branches
  • Salt to taste

Liquids:

  • Water-2 cups
  • Ghee/Avocado Oil/Coconut oil-2 tablespoons

Cooking Instructions:

  • Rinse the rice and soak it for 10 minutes. Rinse again in a strainer.
  • To make the perfectly cooked non sticky rice, take the rice in a cooker (remove the whistle) or steamer. Add 2 cups of water and 1 tablespoon of ghee/oil. Steam the rice for 7-10 minutes. If you don’t want to use ghee, you may also add coconut oil or avocado oil. Take out the rice in a big bowl and keep it aside.
  • Now heat 1 tablespoon of ghee/oil in a pan. Add cumin seeds and let them crackle.
  • Add diced onion and cook until they turn golden brown.
  • Then add ginger, green chilies, cardamom powder, black pepper powder, saffron, turmeric, Pav bhaji Masala, garam masala and salt to taste. Add ¼ cup of water and mix well.
  • Now add carrot, French beans and green peas. Sauté the vegetables slightly for 3-4 minutes.
  • Add cashew nuts or almonds and mix well.
  • Finally add cooked rice and mix well with rest of the gravy. Cover the lid and let it cook for 5 minutes on medium flame. This will marinate the rice properly. Then turn off the stove.
  • Garnish the pulao with cilantro and serve it hot with curd.

Other Delecious Variation

Use colored bell peppers and onions instead of peas, French beans and carrot.
