Sanjivani Protein Chaat is a mouth-watering dish which will keep your stomach light while stimulating all your taste buds. It is eaten mostly as a side dish with Lunch/Dinner or as a snack. The protein chaat comprises of sprout beans, Sweet chutney, Spicy chutney and Curd. It is a well-known Indian dish which is usually all-age favourite. It has been modified to increase its nutritional value while keeping the deliciousness intact.
Ingredients:
- Mung beans, sprouted-1 cup
- Chana/Chickpeas, boiled-1 cup
- Curd-1 cup
- Sweet Chutney-3 tablespoons or as per taste
- Spicy Chutney-3 tablespoons or as per taste
- Cilantro, finely chopped-2 tablespoons
Spices:
- Turmeric-½ teaspoon
- Baking Soda-½ teaspoon
- Pita chips, crumbled/Indian Sev-½ cup
- Cumin Powder-½ teaspoon
- Black Pepper Powder-½ teaspoon
- Salt to taste which in most cases would be 1 teaspoon
Liquids:
- Water-4 cups
Cooking Instructions:
- To prepare, sprout mung, rinse 1 cup of whole mung beans and soak them in 2 cups of water for 48 hours. Keep changing the water every 12 hours. Then rinse again in a strainer.
- To prepare chana, rinse 1 cup of chana with water. Pressure cook/steam it with 2 cups of water, turmeric, salt and ½ teaspoon of baking soda. Once boiled, drain the excess water with a strainer.
- Take 1 cup of curd and whisk it thoroughly.
- Now in a bowl, take sprout mung and boiled chana. Mix well.
- Now add Sweet chutney, Spicy chutney, curd, Cumin powder, Black pepper powder and salt. Mix again.
- Garnish it with the crumbled Pita chips and finely chopped cilantro. Serve it fresh.
Other Variations:
You can also use Sprout Lentil instead of Mung beans.
