Sanjivani Pina Colada Halwa is a good source of energy, vitamins, iron, antioxidants, and protein. It is delicious and nourishing at the same time which is loved by all age groups and especially more if you have a sweet tooth.
Ingredients:
- Coarse Cream of wheat /Rava/Sooji-1 cup dry roasted*
- Pineapple chunks in juice-1 can
- Sweetener of your choice-½ cup
Spices:
- Cashew nuts -split,1 tablespoon (optional)
- Almonds -Slivered or sliced-1 tablespoon
- Pistachios -Slivered or sliced-1 teaspoon (optional)
- Saffron strands-5 to 10 (optional)
Liquids:
- Ghee / cold pressed coconut oil -2 to 3 heaped tablespoons when solid
- Water-2½ to 3 cups (depending on the size of Sooji, use more if it is more coarse)
Cooking Instructions :
*Dry roast the cream of wheat/ sooji in a cooking pot on a medium flame for about 4-5 minutes and set aside. (Dry roasting will allow you to use less ghee or oil).
- In a cooking pot, add coconut oil on medium flame. Add dry roasted cream of wheat and roast it again on a medium flame until the cream of wheat gets lighter in weight (it is possible to feel when you roast).
- On the other stove, boil 2½ cups of water and add to the above pot and mix well on a low to the medium flame while constantly stirring to not allow clumps to form.
- Now add one can of pineapple chunks with juice and sweetener of your choice. Mix well and turn the stove off.
- Add cashew nuts, saffron and mix them well. Cover the cooking pot with the lid.
- Garnish with almonds and pistachios.
- Serve it warm.
