 Sanjivani Pav Bhaji is handcrafted recipe to ensure the health-freaks get their share of tasty food without compromising on the nutritional value. Sanjivani recipe is rich in protein, full of fibers, vitamins and antioxidants. Pav is a soft bread roll and bhaji is a thick mixture of fresh vegetables and spices. This easy and quick to make recipe is filling and nourishing.

Ingredients:

  • Chana dal, soaked and boiled-½ cup
  • Toor dal/Pigeon peas, soaked and boiled-½ cup
  • Onion, diced-2 cups
  • Tomato, diced-1 cup
  • Carrot, diced-1 cup
  • Green peas-1 cup
  • Capsicum, diced-1 cup
  • Potatoes, boiled and mashed-½ cup
  • Cauliflower, big pieces-1 cup
  • Cilantro, finely chopped-3 tablespoons
  • Pav/Bread-18 (3 per person)

Spices:

  • Garlic, grated-7 cloves
  • Ginger, finely chopped-1 inch
  • Green chilies, finely chopped-1 teaspoon
  • Turmeric-½ teaspoon
  • Badshah Pav Bhaji Masala-2 tablespoons
  • Salt to taste

Liquids:

  • Avocado Oil/Canola oil/other cooking oils-2 to 3 tablespoons
  • Butter-1 teaspoon per Pav
  • Lemon, juice-1 tablespoon
  • Water-3 to 4 cups

Cooking Instructions:

  • Take carrot, green peas, cauliflower, capsicum, tomato in a grinding jar and grind them coarsely.
  • Add boiled potatoes, toor dal and chana dal to the ground vegetables and mix well.
  • Heat the cooking oil in a pan and add onions. Sauté until they turn golden brown and then add ginger, green chilies, turmeric, Pav Bhaji masala and salt. Cook them for 1 minute.
  • Add garlic and mix well. Let it cook for 1 more minute. Add dal and vegetable mixture in the pan and mix again.
  • Add 2 cups of water and let it simmer on medium flame for 5 minutes to bring out the flavor of the spices. When the consistency of curry becomes thick enough then put off the flame.
  • Add lemon juice and mix well. Garnish with cilantro.
  • Now with the help of the knife, slit the Pav horizontally keeping the one edge intact.
  • Heat the nonstick skillet and put the butter. Keep the flame medium and put the slitted Pav on top of the melted butter. Press it with the spatula until it turns golden in color.
  • Flip the pav and repeat the step. Once both the sides are toasted, remove the Pav with the help of spatula and put it on a plate.
  • Serve the Bhaji with hot Pav.
