Sanjivani Pani Puri is the improvised recipe of Indian street food keeping the health as priority.  This popular snack is packed with protein, minerals and anti-oxidants. It is widely loved by children and women because of its sweet & spicy flavor. It has 4 elements : Puri (puffed and hollow), Sweet water (Pani), Spicy water (Pani) and Masala. The masala is rich in protein and Spicy pani is a great drink for detox

Ingredients:

  • Mung beans , soaked and boiled-1 cup
  • Chana , soaked, pressure cooked-1 cup
  • Mint , chopped-2 cups
  • Cilantro , chopped-2 cups
  • Date paste-½ cup
  • Puri-40 pieces (easily available at the Indian stores)

 Spices:

  • Turmeric -1 teaspoon
  • Ginger , ground-1 inch
  • Tamarind / Dry mango powder / Lemon juice -1 teaspoon
  • Cumin powder -1 tablespoon
  • Lemon juice -1 tablespoon
  • Red Chili powder -½ teaspoon
  • Black Salt -1½ teaspoons
  • Salt to taste

 Liquids:

  • Water as required for boiling and chutney

Cooking Instructions:

  • Step 1 Masala
    • Rinse and soak mung beans and black chickpeas separately.
    • Steam cook or boil the soaked mung beans. Pressure cook chickpeas.
    • Coarsely mash both of them together.
    • Add turmeric, black salt and keep it aside.
  • Step 2 Spicy Pani:
    • Take mint, cilantro, ginger and grind it finely.
    • Add 2 cups of water, lemon juice, red chili powder and salt to taste.
    • Add ice cubes or keep it in the fridge.
  • Step 3 Sweet Pani:
    • Take date paste and mix it with 3 cups of hot boiling water.
    • Then add deseeded tamarind/lemon juice, salt, cumin powder. Add red chili powder(optional) for extra spiciness.
    • Mix well and preserve it in the freezer.
    • Remove it 30 minutes prior to use.
  • Step 4 Assembling:
    • Serve 4 puris and 1 tablespoon masala in a plate and both pani in two small bowls.
    • Now make one small hole with the fingertip in the center of a Puri’s one side.
    • With a spoon, stuff the mung beans and chickpeas masala through that hole.

Quickly dip it into the Sweet and Spicy pani and eat it in one go!
