Sanjivani Kathi Roll is a popular dish from the land of Kolkata, the eastern part of India. It is a combination of healthy vegetables which are marinated in the flavorful chutneys and rolled in a wheat flour wrap. This Sanjivani recipe has been modified to enhance the health quotient with nutritional chutneys and Garbanzo beans that makes the Kathi roll richer in protein. It is easier for mothers to provide nourishment for their children with protein, vitamins, micronutrients, and antioxidants as it is universally loved by all age groups who are able to chew.
Ingredients:
- Garbanzo beans, boiled-1 cup
- Onion, finely sliced-1 cup
- Carrot, grated/julienned-1 cup
- Cabbage, finely chopped-1 cup
- Lettuce, finely chopped-1 cup
- Tomato, chopped -1 cup
- Cucumberstrips-1 cup
- Paneer, grated-½ cup
- Paratha/Roti/Tortilla/Whole wheat flour wrap-roasted-8
Liquids:
- Avocado oil /Canola oil-1 tablespoon
- Sweet and Sour chutney-4 tablespoons
- Spicy Green Chutney-4 tablespoons
- Cilantro Garlic Chutney-4 tablespoons
Cooking Instructions:
- In a big bowl, mix garbanzo beans, onion, carrot, cabbage, lettuce, tomato, cucumber, and grated paneer.
- When ready to eat, add different chutneys to a small portion of the above mixture and mix well.
- Spread the mixture on one side of the tortilla and roll it.
- Brush the roll with/without a small amount of oil as desired
- Put the roll in a toaster oven or air fryer or on a skillet to toast all sides until browned light.
- Serve it hot with additional chutneys as desired.
If packed for meal to be eaten at a different time, keep the mixture, chutneys and tortillas separate until ready to eat when it can be rolled as described above.
