Batter Ingredients:

  • Please refer to our All-in-One Idli/Dosa batter recipe Use it after it is fermented.
  • Idli Rice (preferred)/brown rice-2 cups, rinsed and soaked for 2 hours
  • Urad /split black gram-1 cup, rinsed, and soaked for 2 hours
  • Mung dal -1 cup, rinsed and soaked for 2 hours

Spices: 

  • Salt to taste

Liquids:

  • Water-2 ½ to 3 cups
  • Avocado oil /cooking oil-2 Tablespoons

Cooking Instructions :

  • Stir the fermented batter. The tiny bubbles visible in the batter is a sign that the batter is well-fermented and Idli will be soft and spongy.
  • Take Idli cooker/steamer and pour 6-8 cups of regular water to boil on a high flame.
  • Grease the Idli molds and fill them up with the batter with a ladle.
  • Place the Idli stand in a steamer and cover it. Please make sure that the Idli stand is at least and an inch above the waterline below to not allow any water to get into the batter when water is boiling
  • Steam for about 10 minutes on a high flame.
  • Remove the Idli stand from the steamer. Let it cool for about 3-5 minutes
  • Remove the Idlis gently with a butter knife or a tablespoon from the molds and keep them in a warmer or a container to prevent from drying them up.
  • Serve it hot with Sambhar or Coconut chutney.

Oops..I messed up…what do I do now?

  • If the batter is not fermented and need to cook Idlis right away, then add about ½-1 teaspoon of Eno in a small batch of Idli batter and stir thoroughly so the batter rises and then follow the steps of making the Idlis.
  • If the batter is too thin, add a small quantity of cream of wheat, stir and wait for a minute or so, to make sure the consistency is as required. Cream of wheat will absorb water in a few minutes and the batter can get more thick than desired
  • “I do not have Idli rice”- In this case, any other type of rice may be used but the structure may change to some extent and will have to make minor adjustments in the ratio of dal and rice. You may choose to use brown rice for diabetics. Please refer to the internet for dal and rice ratio for the same.
