 Sanjivani Gajar Halwa is rich in Vitamin A, Calcium, and fibers. Topped with choicest dry fruits, this nourishing dessert is favorite amongst all age groups. Try this easy & quick to make recipe to ensure the nutritional value is intact as we treat our taste buds!

Ingredients:

  • Carrot, grated or finely crushed in a food processor-1 cup
  • Almonds, slivered or sliced-1 to 2 tablespoons
  • Pistachios, slivered or sliced-1 to 2 tablespoons
  • Cashew nuts pieces-1 to 2 tablespoons

Spices:

  • Cardamom powder-½ teaspoon
  • Saffron-5 to 6 strains
  • Organic sugar-1-2 tablespoons based on the sweetness desired (Or use Blue Agave syrup/ Sweetener of your choice to get equivalent sweetness. If using honey, then do not add to the warm or hot foods)
  • Milk powder-2 tablespoons (for vegan version, use cashew nut powder or almond powder instead) or ¼ cup milk of your choice.
  • (If using milk instead of milk powder, then remember to burn out the liquid of the milk)

 

Liquids:

  • Ghee-1 tablespoon (for vegan, skip this)

Cooking Instructions:

  • Pressure cook 1 cup of grated or finely crushed carrots with ghee for 5 minutes or steam for 10 minutes to preserve the color better or cook in a pot on the stove top for 15 minutes in milk, until carrots become soft and well cooked
  • Add milk powder, cardamom powder, saffron and organic sugar/ sweetener of your choice in the carrots. Mix well.
  • Top with slivered/sliced almonds, pistachios, and cashew nuts
  • Cover with the lid to hold the aroma for another 5 min.

Serve it hot.
