Sanjivani French Beans with Ajwain is a low-calorie vegetable with high protein content and fibers in addition to being rich in vitamins and minerals. Made with Ajwain seeds, it supports digestion, boosts immunity, and makes the dish more aromatic and flavorful.

Ingredients:

  • French beans , chopped into small pieces-2 cups
  • Cilantro , finely chopped-2 to 3 tablespoons (more if desired)
  • Lemon juice -1 teaspoon, more if desired

Spices:

  • Ginger , ground-½ inch
  • Ajwain seeds-½ teaspoon
  • Baking soda -1 pinch
  • Green chilies , ground-½ teaspoon- more or less for desired spiciness
  • Asafetida -¼ teaspoon
  • Turmeric powder -1 teaspoon
  • Salt to taste

Liquids:

  • Avocado oil -2 tablespoons
  • Water-½ cup

Cooking Instructions:

  • In a cooking pan, heat the oil and add ajwain.
  • Once the seeds simmer, add asafetida, French beans, baking soda, turmeric powder, green chilies, ginger, and salt. Also add water and mix well.
  • Now cook it on a low flame for about 10-15 minutes until tender.
  • Add lemon juice and cilantro for additional flavor.
  • Serve hot with Roti or Tortilla or Paratha.

Optional:

May add tender green peas ½ to 1 cup while cooking to increase the protein content.
