Energy Nut balls as dessert or on-the-go snack-can be easily made within minutes to entertain a surprise guests and are immunity boosters especially during winter season. They are liked by all age groups.

Energy Nut Balls are packed with fibers, protein, and healthy fats in addition to having a good source of calcium, vitamins, and antioxidants. They are made without artificial sweeteners, are vegan and gluten free. The Sanjivani recipe of Nut balls is very quick and hassle free. Once prepared if kept in the fridge, the ground nuts stay fresh and do not get rancid easily. We recommend not making more than a week’s supply at a time. It is a great idea to keep them prepared in your kitchen and eat them anytime, anywhere as their shelf life is 7 to 8 days! Most soaked nuts turn into live seeds with more benefits. Also, when soaked, the acid from the skin dissolves in the water and can be removed. Roasting destroys the life in the nuts. Here in this Sanjivani energy nut balls, author prefers to not roast them but if there is concern of possible contamination with microorganisms then we recommend light sauteing but not soaking the nuts for this recipe.
Ingredients:
- Pitted Dates -1 cup (Maybe replaced by dried figs)
- Almonds -1 cup
- Walnuts-1 cup
Optional: May add raw, unsalted, sunflower seeds and/ pumpkin seeds or sesame seeds
Spices:
- Cardamom powder-½ teaspoon
- Dry ginger powder -½ teaspoon
- Pipramul powder-1/2 teaspoon (optional and preferred only in winter months if available)
Liquids:
- Coconut Oil , cold pressed-1 heaped tablespoon or 2 melted tablespoons (more if desired)
- Ghee may be used instead in equal amount if desired
Instructions :
- Grind almonds first in a dry grinder jar and then halfway through, add walnuts in the grinder jar to grind mildly coarsely.
- Now add pitted dates and grind again to let them clump together.
- Add cardamom powder, dry ginger powder, Pipramul powder (if desired) and coconut oil and mix well in the blender.
- Now take one tablespoon of mixed preparation in your hand and roll between your palms to make tennis ball sized ball. Do the same with the remaining preparation and store them in a container. Either eat them fresh or save them in the fridge up to a week normally.
Note :
- May add sunflower seeds or pumpkin seeds or crushed sesame seeds if desired for additional health benefits.
- Dates may have to be washed and dried if contamination is suspected. In doubtful cases, mild sauteing with coconut oil or ghee is preferred. This step is not required if premium quality pitted dates are available.
