Health Benefits:

 Dhokla is believed to be very light on digestive system because it contains minimal fat, or cholesterol.

Ingredients:

  • Rice /brown rice-2 cup, rinsed and soaked for 2 hours
  • Urad dal -1 cup, rinsed and soaked for 2 hours
  • Mung dal -1 cup, rinsed and soaked for 2 hours

Spices: 

  • Salt to taste
  • Black pepper powder-½ teaspoon
  • Red chili powder -½ teaspoon (optional)

Liquids:

  • Water as needed for boiling
  • Avocado Oil -5 tablespoons

Cooking Instructions for Batter :

Cooking Instructions :

  • Stir the fermented batter. The tiny bubbles visible in the batter is a sign that the batter is well-fermented and Dhokla will be soft and spongy.
  • Pour 6-8 cups of regular water to boil in the steamer on a high flame.
  • Meanwhile grease the dhokla plate with the oil and pour 3-4 ladles of batter in it. Sprinkle pinch of red chili powder and black pepper powder over it.
  • Put the plate in the steamer and close the lid and let it cook for 5-7 minutes on high flame.
  • If in doubt, use butterknife/toothpick to check if it comes out clean which is a sign that it is cooked.
  • Remove the Dhokla thali from the steamer.
  • Smear a thin layer of oil to keep the surface moist and let it cool for 2-3 minute.
  • Using a butterknife, cut the dhokla/steamed bread into square or diamond shape pieces and remove them with the help of a spatula.
  • Serve them hot with Dhokla chutney.

Oops..I messed up…what do I do now?

  • If the batter is not fermented and you have to cook Dhokla right away, then add about ½-1 teaspoon of Eno in a small batch of dhokla batter and stir thoroughly so the batter rises and then follow the steps of making the dhokla.
  • If the batter is too thin, add a small quantity of cream of wheat, stir and wait for a minute or so, to make sure the consistency is as required. Cream of wheat will absorb water in a few minutes and the batter can get more thick than desired
  • “I do not have Idli rice”- In this case, any other type of rice may be used but the structure may change to some extent and will have to make minor adjustments in the ratio of dal and rice. You may choose to use brown rice for diabetics. Please refer to the internet for dal and rice ratio for the same.
