Sanjivani Burrito bowl is a delicious Mexican recipe made up with rice, beans and vegetables. This one-dish meal is extremely satisfying and nourishing which makes it popular world-wide. At Sanjivani, this recipe has been devised in six easy steps ensuring the nutrients are well balanced and intact. This heart healthy, low-fat dish is rich in protein, fibers and antioxidants.
Ingredients:
- Rice/Brown rice, boiled-2 cups
- Black beans, boiled-1 cup
- Onion, sliced-1 cup
- Onion, finely chopped-¼ cup
- Corn, boiled-1 cup
- Tomatoes, finely chopped-½ cup
- Red bell pepper, sliced-1 cup
- Avocado, ripe and diced-2
- Cilantro, finely chopped-6 tablespoons
- Lemon juice-2 tablespoon
- Cheese, grated-2 tablespoons (Optional)
- Sour cream-½ cup (Optional)
- Jalapeno, pickled-1 tablespoon (Optional)
Spices:
- Taco seasoning(hyperlink) -1½ teaspoon
- Salt-2 to 3 teaspoons
- Green chilies, finely chopped-½ teaspoon
- Black pepper powder-½ teaspoon
Liquids:
- Olive oil-1 tablespoon
- Water-required for boiling beans, rice and corn
Cooking Instructions:
- Step 1 – Rice
- Take 2 cups of boiled rice in a bowl.
- Add 2 tablespoons of cilantro, 1 tablespoon lemon juice, 1 teaspoon salt, ¼ teaspoon black pepper powder.
- Mix well with a spatula and keep it aside.
- Step 2 – Beans
- In a bowl, take 1 cup of boiled black beans.
- Add ½ teaspoon salt, ½ teaspoon taco seasoning and ½ teaspoon lemon juice.
- Mix well and keep it aside.
- Step 3 – Vegetables
- Heat 1 teaspoon olive oil in a pan.
- Add 1 cup sliced onion and 1 cup sliced red peppers. Sauté them for 1 to 2
- Add 1 teaspoon taco seasoning, ¼ teaspoon salt, 2 tablespoons cilantro and 1 teaspoon lemon juice.
- Mix well and cook for 1-2 minutes. Put off the flame and keep it aside.
- Step 4 – Uncooked Tomato – Corn Salsa
- Take 1 cup boiled corn and ½ cup finely chopped tomatoes in a bowl.
- Add ¼ cup finely chopped onion, 1 tablespoon cilantro, ½ teaspoon finely chopped green chilies, 2 teaspoon lemon juice and ½ teaspoon salt.
- Mix well.
- Step 5 – Guacamole
- Take big pieces of 2 ripe avocado in a plate.
- Add 1 tablespoon cilantro, 2 teaspoons lemon juice, ½ teaspoon Salt and ¼ teaspoon black pepper.
- Mash and mix everything with a fork until it becomes a smooth paste. Guacamole is ready!
- Step 6 – Final Step to a Burrito Bowl
- In a big plate, spread a layer of rice evenly.
- On this spread of rice, put beans, vegetables, tomato corn salsa and Guacamole.
- Optional : Put sour cream, grated cheese and pickled jalapeno for additional flavor.
- Finally serve it fresh with Nachos chips on top of it.
