Sanjivani Cauliflower Pulao is a healthy variation from traditional pulao where the rice content is reduced with addition of rice like Cauliflower with an enhanced taste and increased nutritional value. perfect dish customized for busy food lovers who want to taste the health in every bite. Made with rice, cauliflower and Indian spices, this recipe is mouth-watering and nourishing. It is rich in antioxidants, vitamins and dietary fibers and a wholesome meal for all age group. Have it plain or with curd during lunch or dinner.
Ingredients:
- Cooked Rice -1 cup (normally ½ cup of uncooked rice yields 1-1.25 cup of cooked rice based on the type of the rice grain)
- Cauliflower , ground-1 cups
- Colored bell peppers , finely chopped-1 cup
- Onion , finely chopped-1 cup
- Cashew Nuts, splits-2 tablespoons
- Almonds , sliced-2 tablespoons
Spices:
- Cumin seeds -½ teaspoon
- Turmeric powder-½ teaspoon
- Black pepper powder-¼ teaspoon
- Pav bhaji masala-1 tablespoon
- Ginger , grated or ground-½ teaspoon
- Cardamom – ½ teaspoon
- Salt to taste
Liquids:
- Water-1 cup
- Ghee / Avocado oil -2 tablespoons
Cooking Instructions:
- Rinse the rice and soak it for 10 minutes. Rinse again in a strainer.
- Steam cook the rice for about 7-10 minutes (please refer to our plain rice recipe).
- Once cooked well, Take the rice out in a big bowl and keep it aside.
- Now heat 1 tablespoon of oil in a pot, add cumin seeds and let them crackle.
- Add onions, colored peppers, and ground cauliflower and sauté for about 2 minutes.
- Now add ginger, black pepper powder, turmeric, and pav bhaji masala.
- Add ¼ cup of water and mix well.
- Add cashew nuts, almonds, steamed rice to the above mixture.
- Add salt to taste and cardamom and gently mix well.
- Cover the lid, turn the stove off and let it cook inside with the trapped heat for 5 more minutes on a medium flame.
- Garnish with Cilantro.
- Serve it hot with the main course meal. Some like to eat with Yogurt.
